Chayote (sechium edule) is a member of the gourd family-Labuan which was originally cultivated in Central America by the Mayan and Aztec civilizations. After the Spanish conquest, squash and then spread throughout the world, including Indonesia with the Dutch. The name "squash" is actually misleading, because it was not coming from Siam or Thailand. Around the world, chayote is known by various names, including chayote (UK), welok (Java), christophene (France) and chowchow (China).
